Country Pumpkin Muffins


Ingredients
2 c sugar
1/2 c vegetable oil
3 eggs
1 1/2 c canned pumpkins
1/2 c water
3 c all-purpose flour
1 1/2 tsp baking powder
1 tsp baking soda
1/2 c ground cloves
3/4 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp salt
1 1/2 raisins (I hate cooked raisins so I ALWAYS omit this)
1 c walnuts

Directions:
1. In a large bowl, beat sugar, oil, eggs, pumpkin, and water.
2. Combine flour, baking powder, soda, salt and spices. Add to pumpkin mix; blend well.
3. Fold in raisins (yuck) and walnuts.
4. Spoon into greased muffin tins, filling 3/4 full.
5. Bake at 400 degrees for 15 minutes.
