Vegetable Cheese Soup



2 T butter
2 carrots, sliced
1 small onion, chopped.
1T cornstarch
3T flour
2 C milk
1 (14 oz) can of chicken broth
2 C. cheese, grated
1/2 t salt
1 stalk brocolli (cooked)
1 potatoe, chopped and cooked

Instructions
1. Melt 2 Tbsp of butter in a large pot.

2. Saute 2 carrrots sliced and 1 small onion chopped.
3. Stir in 1 Tbsp cornstarch and 3 Tbsp flour.
4. Heat and then add 2 cups of milk and 1- 14 oz can of chicken broth.
5. Cook over medium heat until thickened. (About 10-15 min)
6. Add 2 cups grated cheddar cheese and 1/2 tsp salt.
7. Then add 1 stalk cooked brocolli and 1 potato cooked and chopped.
8. Add 1/2 tsp of parsley and chives if you like. (I don't.)
